It's a tribute to Mein Pferdehof (My Horse Farm), the game the developers grew up on. Rename a horse to one of 38 MPH horse names — Summerrain, Baghira, Samurai, Daydream, Eclipse, Trinity, Jungle Prince, Black Beauty… — and its coat and mane are drawn with the MPH colour palette instead of the default one (that's the purple-ish tint players noticed). Rename it back to undo. Separately, the settings have colour presets — Default, MPH and Rainbow — that recolour every horse in the save; you can save your own.

Does the name change stats or traits?

No reports of that. It only switches which colour palette the horse is drawn with.

Yes — the effect is reported to work on rename, and renaming back restores the normal palette.

What's the Rainbow preset?

A second built-in palette in the colour settings alongside Default and MPH. Presets apply to every horse in the save at once; each horse has two palette slots, one for the body coat and one for mane, tail and legs.
